Sauternes is the largest desert wine AOC in Bordeaux that includes five communes, including Barsac. Sauternes wines are made from Sémillon (80%) and Sauvignon (15%) grapes with Muscadelle occasionally added. The noble rot is an extremely important element, therefore only the most affected grapes are picked when they reach the 14% alcohol level required. This kills off the yeast leaving behind sugars that would normally be fermented away. Sauternes is denser and darker than other dessert wines. When mature, the wine develops a stunning amber colour. Flowers and fruit melt together to create an elegant bouquet of complexity and balance. Aromas include vanilla, quince, mango, pineapple, stewed peach, dried apricot and passion fruit with a smooth and creamy finish. There are also floral notes, with touches of linden, acacia, mimosa and honeysuckle, along with the typical notes of beeswax, almond and hazelnut.
